Introduction

Hi, I am Christina Kalfaian, the founder of Papa's Kitchen and the daughter of Jimmy Papadopoulos. He is known in the restaurant community for his innovative skills in the kitchen for over 45 years. Along with creating the one-of-a-kind Pink Greek dressing, which is loved and enjoyed by many people today. In 2021, my mother and I co-founded Papa's Kitchen, where we offer four distinct gluten-free salad dressings, including Pink Greek, Creamy Dill, Maple Harvest, and Fresh Herb Vinaigrette. Each dressing is meticulously crafted to enhance the taste of any dish it is served with.


Ever since I was young, I knew that I wanted to follow in my parent's footsteps and become an entrepreneur. In addition to running Papa's Kitchen, I also assist numerous families in finding their ideal homes, or selling their properties for the highest possible value.



The Inspiration Behind Papa's Kitchen

After my father retired in 2015, we received countless requests for his amazing recipes. This sparked the idea to bottle his dressings, and knowing the authenticity of his famous Pink Greek, I knew it would forever carry on his legacy.


From Idea to Reality

At first, I struggled to figure out how to manufacture our dressings safely and sustainably. But with the invaluable guidance of the amazing mentors at MSU Product Center, I learned the ropes. Now, we are working in collaboration with distribution companies to ensure that our dressings are available in an increasing number of markets with confidence.



Attracting Customers and Growth Strategies

I have a talent for talking, as my husband likes to say. We enjoy meeting new people, engaging in conversations, and showcasing our dressings. One of our signature moves is offering mini salads with samples of our dressings at local markets, events, and food shows.


Overcoming Challenges in Starting the Business

Starting a business is never a smooth road, and anyone who claims otherwise is not being honest. When my mother and I began our business, we encountered several challenges, but the most difficult one was getting recipes from my father. He would often tell us, in his heavy Greek accent, "A good cook doesn't need a recipe book." It was quite comical trying to get the recipe out of him. Every time I visited him, my mother stood in their kitchen with a scale, multiple bowls, measuring cups, spoons, pen, and paper. My father would simply say, "Add a pinch of this" or "Add a handful of that." Unfortunately, his definition of a "pinch" or "handful" varied each time. Ultimately, we were able to find a solution and master his creations, but it was an uphill climb from there.

There are several costs associated with running a business, such as manufacturing expenses, legal fees, and the investment of time, energy, trust, and perseverance.


The Vision for Papa's Kitchen's Future

Papa's Kitchen is just getting started, and while we're proud of what we've accomplished so far, there's still a lot of room for us to grow, particularly in different regions throughout the Midwest.


Guiding Principles for Entrepreneurial Success

My advice to those who aspire to be entrepreneurs is to start small, remain focused, and never give up. Embrace failure as a learning opportunity and be open to pivoting when required. Network with other entrepreneurs and seek out mentors who can offer guidance and support. Ensure that you are passionate about what you are doing and believe in your mission - this will keep you motivated even when times get tough. Finally, don't be afraid to take calculated risks, but make sure to weigh the potential rewards against the possible downsides before making any decisions.
